I'm not quite sure how this recipe came about. I think maybe the family wanted pizza and Mexican and couldn't decide which way to go, or maybe these were just the ingredients I had left in the house one weekend. Since putting the recipe together, it has become the most requested meal in our house and one that pleases guests as well. The pizza crust recipe I use is from Giada De Laurentiis, and after much trial and error over the years, I have found her recipe to be the best no-fail pizza dough. However, it is also reasonable to buy pizza dough at the store and use that to cut down prep time! This is a two-hour recipe, but you can cut that by half if you purchase your dough.
Toppings are pretty simple, and you can change these around, too. I find thinly sliced jalapeños and green onions to be the best fit, but other peppers or even olives might work too. Play around! I always top this with a squiggle of Sriracha sauce, and it is certainly a spicy pizza!

Ingredients
Pizza Dough (Giada De Laurentiis recipe: http://www.foodnetwork.com/recipes/giada-de-laurentiis/pizza-dough-3075408). This yields about one pound of dough
4 tablespoons Olive Oil
2 very large Yellow or White Onions, sliced
1 teaspoon Penzey's Chili Powder (Buy here: https://www.penzeys.com/online-catalog/regular-chili-powder/c-24/p-55/pd-s)
1/4 teaspoon Garlic Powder
1/4 teaspoon Penzey's Chipotle Powder (Buy here: https://www.penzeys.com/online-catalog/chipotle-pepper-ground-red/c-24/p-866/pd-s)
Salt
8 oz. Cabot Extra Sharp Cheddar Cheese, shredded
One bunch Green Onions, sliced
2 Jalapeños, thinly sliced

Steps
After following pizza dough recipe and allowing dough to rise an hour, spread dough out on a cookie sheet lined with parchment paper and let rise while working.
1. Saute sliced onions on medium heat in about 4 tablespoons of olive oil. Add a sprinkle of salt.
2. When the onions are soft (about 10 mins or so) add in the chili powder, chipotle powder, and garlic powder. Continue to cook on med-low until flavors blend, about another 5-10 mins or so. You don't have to fuss too much with the onions, just make sure they don't burn.
3. When onions are soft and cooked down with the spices, use a slotted spoon and top the pizza dough with them, scattering all around.
4. Add shredded cheddar cheese, jalapeños, green onions, and a sprinkle of chipotle powder.
5. Bake on BOTTOM RACK of oven at 425 degrees, about 10-12 mins or until cheese is melted and crust is browning. Don't overbake -- just bake until the cheese melts.
6. Let the pizza rest a minute or two, then squirt Sriracha sauce from a plastic bag, making designs or lines.
7. Cut and Enjoy!
